- Peel and dice the ripe mangos into small, bite-sized pieces.
- Finely chop half a red onion and seed then mince one jalapeño.
- In a mixing bowl, combine the diced mangos, finely chopped red onion, minced jalapeño, and freshly chopped cilantro.
- Squeeze the juice of one lime over the mixture.
- Sprinkle in salt to taste and gently stir all ingredients to combine.
- Enjoy immediately or let chill in the refrigerator for 30 minutes.
Notes
For variety, top off the salsa with avocado slices or crumbled feta cheese. Best enjoyed fresh, but can be stored in an airtight container for 2-3 days.
