- Wash all produce thoroughly.
- Peel and dice the mangoes, removing the pit.
- Cut the red bell pepper and cucumber into bite-sized pieces.
- Thinly slice the red onion. Soak in cold water for about 10 minutes for a milder flavor if desired.
- Chop the cilantro.
Mixing
- In a large mixing bowl, combine diced mango, bell pepper, cucumber, sliced red onion, and chopped cilantro.
- Squeeze the juice of two limes over the mixture.
- Add salt to taste.
- Gently toss all ingredients until evenly coated.
Serving
- Serve immediately or chill in the fridge for about 30 minutes before serving.
Notes
For a creamy touch, add diced avocado. Use ripe mangoes for best taste, and avoid reheating as it’s best served fresh.
