Ingredients
  

For the Filling
  • 2 pieces ripe mangoes, peeled and diced Ensure mangoes are ripe for best flavor.
  • 1 tablespoon honey or maple syrup To mix with the mango.
For the Crust
  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup To mix with the crust ingredients.
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
  2. In a medium bowl, combine the diced mangoes with 1 tablespoon of honey or maple syrup, mixing gently. Set aside.
Mixing the Crust
  1. In a large bowl, mix together the rolled oats, flour, brown sugar, cinnamon, salt, and baking powder.
  2. Pour in the melted coconut oil and the remaining honey or maple syrup, mixing until you achieve a crumbly texture.
Assembling the Bars
  1. Press half of the oat mixture into the bottom of the prepared baking dish.
  2. Spread the mango mixture evenly over the crust.
  3. Crumble the remaining oat mixture on top.
Baking
  1. Place the baking dish in the preheated oven and bake for about 25 minutes, or until the topping is golden brown and the mangoes are bubbly.
Cooling and Serving
  1. Let the bars cool completely in the baking dish before lifting them out using the parchment paper.
  2. Cut into squares and serve as desired.

Notes

These bars can be served warm or cold and pair well with ice cream or tea. For added texture, consider sprinkling crushed nuts on top before serving.
