- Cover the bowl and place it in the refrigerator for about 15-20 minutes to thicken.
- Check the consistency. If too thick, add a splash of coconut milk to loosen.
Assembly
- In serving glasses or bowls, layer the chia pudding followed by a layer of diced mango.
- Top with more chia pudding and finish with a final layer of mango.
Chill and Serve
- Cover with plastic wrap and refrigerate for another 30 minutes.
- Serve chilled and enjoy!
