For the chia pudding base
  • 1 cup coconut milk (or almond milk for a lighter option) Ensure it's unsweetened for best flavor.
  • 1/4 cup chia seeds These will thicken the pudding.
  • 2-3 tablespoons maple syrup or honey Adjust sweetness to taste.
  • 1 teaspoon matcha powder Use culinary grade for the best flavor.
  • 1/2 teaspoon vanilla extract Halal certified.
For the topping
  • 1 ripe mango diced Reserve some for topping.

Method
 

Preparation
  1. In a mixing bowl, combine the coconut milk, chia seeds, maple syrup or honey, matcha powder, and vanilla extract. Whisk everything together until well combined.
  2. Cover the bowl and place it in the refrigerator for about 15-20 minutes to thicken.
  3. Check the consistency. If too thick, add a splash of coconut milk to loosen.
Assembly
  1. In serving glasses or bowls, layer the chia pudding followed by a layer of diced mango.
  2. Top with more chia pudding and finish with a final layer of mango.
Chill and Serve
  1. Cover with plastic wrap and refrigerate for another 30 minutes.
  2. Serve chilled and enjoy!

Notes

For variations, customize with toppings like coconut flakes, nuts, or fresh berries. Store in an airtight container in the refrigerator for up to 5 days. Best enjoyed cold; avoid reheating.
