Ingredients
  

For the salad
  • 1 lb shrimp, peeled and deveined
  • 1 ripe mango, diced
  • 1 whole avocado, diced
  • 2 cups mixed greens
  • 1/2 medium red onion, thinly sliced
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • to taste salt and pepper
For Spicy Mango Dressing
  • 1 whole mango, pureed
  • 1/4 cup olive oil
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder

Method
 

Cooking the Shrimp
  1. In a skillet over medium heat, add the shrimp, seasoned with salt and pepper. Cook for 5-7 minutes until they are pink and opaque. Once done, set them aside to cool.
Preparing the Salad
  1. In a large mixing bowl, combine diced mango, diced avocado, mixed greens, red onion, and chopped cilantro.
  2. Gently fold in the cooked shrimp into the salad mix.
Making the Dressing
  1. In a blender, combine the pureed mango, olive oil, honey, lime juice, and chili powder. Blend until smooth and well combined.
Combining and Serving
  1. Drizzle the spicy mango dressing over the salad, toss everything together gently to coat, and adjust the seasoning with salt and pepper.
  2. Enjoy this vibrant salad immediately, garnished with additional cilantro if desired.
