  • 12 pcs eggs
  • 2 cups milk
  • 1 cup shredded cheese (cheddar or your choice) Reserve a bit for topping
  • 1 pound breakfast sausage (cooked and crumbled) Ensure it’s Halal
  • 2 cups diced bread Any type
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • to taste salt
  • to taste pepper
Optional Toppings
  • to taste salsa
  • to taste avocado
  • to taste green onions

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Use a bit of oil or cooking spray to grease a 9×13-inch baking dish.
  3. In a large mixing bowl, whisk together the eggs and milk. Add in the cooked and crumbled sausage, diced bread, bell peppers, onions, salt, and pepper. Mix until well combined.
  4. Fold in the shredded cheese, reserving a little to sprinkle on top later.
  5. Pour the mixture into the greased casserole dish and spread evenly.
  6. If you skipped adding cheese before, sprinkle the reserved portion on top now.
Baking
  1. Place the casserole in the preheated oven and bake for 45 minutes or until the eggs are set and the top is golden brown.
  2. Allow it to cool for a few minutes before cutting it into squares.
  3. Serve hot, and complement it with your favorite toppings!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. To freeze before baking, thaw overnight in the fridge and bake as instructed. For reheating, use the oven covered with foil at 350°F for about 20-25 minutes.
