Ingredients
  

Meat Base
  • 1 lb ground beef or halal sausage Use halal-certified meat options to adhere to dietary restrictions. Substitute with ground turkey or chicken if desired.
Vegetables
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
Tomato Base
  • 28 oz can crushed tomatoes
  • 4 cups beef or vegetable broth
Pasta
  • 8 oz lasagna noodles, broken into pieces Keep an eye on them to avoid mushiness.
Cheeses
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded Reserve half for topping.
  • 1/2 cup grated Parmesan cheese
Seasoning
  • 1 tablespoon Italian seasoning

Method
 

Preparation
  1. In a large pot over medium heat, add the ground beef or halal sausage, stirring occasionally. Cook until browned, about 5-7 minutes. Drain any excess fat.
  2. Add the chopped onion and minced garlic to the pot. Sauté them together with the meat until the onion is translucent, about 3-4 minutes.
  3. Stir in the crushed tomatoes, broth, Italian seasoning, and season with salt and pepper to taste. Bring the mixture to a gentle boil.
  4. Add the broken lasagna noodles and let everything simmer for about 10-15 minutes, or until the noodles are tender.
  5. Reduce the heat to low and stir in the ricotta and half of the mozzarella cheese. Allow them to melt into the soup, creating that creamy texture.
  6. Serve the soup in bowls, topped with the remaining mozzarella cheese and a sprinkle of fresh basil.

Notes

For vegetarian options, replace the ground meat with lentils or mushrooms. Avoid overcooking the noodles in the broth to prevent them from becoming mushy. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months.
