Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef or turkey over medium heat, breaking it up into small pieces as it cooks.
- Once browned, drain excess grease if needed, then stir in the taco seasoning and diced tomatoes. Let it simmer for about 5 minutes.
- Add the diced bell peppers and onions to the skillet. Cook for another 3-4 minutes until the vegetables are slightly tender.
- In a casserole dish, layer the cauliflower rice at the bottom. Pour the cooked meat mixture evenly over the top.
- Sprinkle shredded cheese generously over the dish.
- Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbling and golden.
- Once done, let it cool for a few minutes, and garnish with fresh cilantro before serving.
