Ingredients
  

  • 1 1/2 cups shredded mozzarella
  • 2 Tbsp cream cheese
  • 3/4 cup almond flour
  • 2 tsp baking powder
  • 1 tsp yeast optional or 1 tsp vinegar
  • Pinch salt
  • 1 large egg
  • 1 Tbsp olive oil
  • 5 cloves roasted garlic
  • 2 Tbsp melted butter
  • 1 tsp fresh chopped rosemary

Method
 

  1. Preheat the Oven: Start by preheating your oven to 400°F (200°C).
  2. Roast the Garlic: Combine the butter, olive oil, and roasted garlic in a ramekin and place it in the oven while it preheats. This will infuse the oil with delicious garlic flavor.
  3. Melt the Cheese: In a microwave-safe bowl, melt the mozzarella and cream cheese together for about 90 seconds, stirring until smooth.
  4. Mix the Dry Ingredients: In a separate bowl, whisk together the almond flour, baking powder, yeast, and pinch of salt.
  5. Combine: Add the dry mixture to the melted cheese, along with the egg, and mix until a sticky dough forms.
  6. Prepare the Baking Dish: Transfer the dough to a well-greased pie plate, spreading it evenly. Make indentations with your fingers on the surface.
  7. Add the Garlic Mixture: Pour the prepared butter and garlic over the dough and sprinkle with fresh rosemary.
  8. Bake: Pop it in the oven and bake for 12-15 minutes, or until it’s golden brown.
