  • 2 pieces boneless, skinless chicken breasts
  • 4 slices Swiss cheese
  • 4 slices ham
  • 1 cup almond flour
  • 2 large eggs beaten
  • 1 cup shredded Parmesan cheese
  • to taste Salt
  • to taste pepper
  • as needed Olive oil for frying

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Place the chicken breasts between two pieces of plastic wrap and pound them until they are about 1/4 inch thick.
  3. Lay one slice of ham and one slice of Swiss cheese over each chicken breast. Roll the chicken tightly, securing the ends with toothpicks.
  4. In three separate bowls, set out almond flour, beaten eggs, and shredded Parmesan cheese.
Cooking
  1. Dredge each chicken roll in almond flour, then dip in the beaten eggs, and finally coat with Parmesan.
  2. Heat olive oil in a large skillet over medium heat. Add the chicken rolls and cook until golden brown on all sides.
  3. Transfer the browned chicken rolls to a baking dish and bake in the preheated oven for 25-30 minutes until fully cooked.
  4. Remove the toothpicks, let the chicken rest for a few minutes, then slice and enjoy your tasty creation!

Notes

Storage: Store any remaining chicken in an airtight container in the refrigerator for up to 3 days. To reheat, place the chicken on a baking sheet in a preheated oven at 350°F (175°C) for about 10-15 minutes. For freezing, wrap tightly and keep for up to 3 months. Thaw overnight in the fridge before reheating.
