Preparation
- Preheat your oven to 375°F (190°C).
- Place the chicken breasts between two pieces of plastic wrap and pound them until they are about 1/4 inch thick.
- Lay one slice of ham and one slice of Swiss cheese over each chicken breast. Roll the chicken tightly, securing the ends with toothpicks.
- In three separate bowls, set out almond flour, beaten eggs, and shredded Parmesan cheese.
Cooking
- Dredge each chicken roll in almond flour, then dip in the beaten eggs, and finally coat with Parmesan.
- Heat olive oil in a large skillet over medium heat. Add the chicken rolls and cook until golden brown on all sides.
- Transfer the browned chicken rolls to a baking dish and bake in the preheated oven for 25-30 minutes until fully cooked.
- Remove the toothpicks, let the chicken rest for a few minutes, then slice and enjoy your tasty creation!
Notes
Storage: Store any remaining chicken in an airtight container in the refrigerator for up to 3 days. To reheat, place the chicken on a baking sheet in a preheated oven at 350°F (175°C) for about 10-15 minutes. For freezing, wrap tightly and keep for up to 3 months. Thaw overnight in the fridge before reheating.
