Ingredients
  

Vegetables
  • 1 head cabbage, chopped
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 cloves garlic, minced
Broth and Seasonings
  • 4 cups vegetable broth
  • 1 can diced tomatoes with juice
  • 1 teaspoon thyme

Method
 

Preparation
  1. In a large pot, heat a drizzle of olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until they become translucent and fragrant.
  3. Stir in the diced carrots and chopped cabbage, cooking for about 5 minutes until the vegetables start to soften.
Cooking
  1. Pour in the vegetable broth and the diced tomatoes (with juice), adding the thyme.
  2. Season with salt and pepper. Bring the mixture to a boil.
  3. Reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes, or until the vegetables are tender.
Serving
  1. Taste and adjust the seasoning if necessary.
  2. Ladle the soup into bowls and enjoy!
