For the Filling
  • 4 large potatoes Make sure they are fresh for the best flavor.
  • 1 cup shredded cheese (cheddar or your choice) Can substitute with Halal-friendly cheese.
  • 1/2 cup cooked chicken or beef, crumbled Optional; can swap for veggies or beans for a vegetarian version.
  • 1/4 cup green onions, chopped
  • 1/2 cup all-purpose flour
  • 1 large egg
  • to taste salt and pepper
  • as needed for frying oil Ensure oil is hot enough to avoid sogginess.

Preparation
  1. Start by peeling and boiling your potatoes in a salted pot of water until they're tender (about 15-20 minutes). Once done, drain and let cool slightly.
  2. In a large bowl, mash the potatoes until smooth. Stir in the shredded cheese, crumbled meat, chopped green onions, and season with salt and pepper to taste.
  3. Take a handful of the mixture and shape it into stick-like pieces—about the size of your finger, as thick or thin as you prefer.
  4. In a separate bowl, whisk the egg. Put the flour on a plate. Dip each potato stick first in the flour and then in the egg to ensure a nice coating.
  5. Heat the oil in a frying pan over medium heat. Once hot, carefully add the potato sticks and fry them until golden brown, about 3-4 minutes on each side. Drain on a paper towel.
  6. Arrange the sticks on a platter. Serve with your favorite dipping sauces and enjoy!

Notes

For storage, keep in an airtight container in the fridge for up to 3 days. For longer storage, freeze for up to a month. Reheat in an air fryer or a preheated oven for best texture.
