Ingredients
  

For the Chicken
  • 1 lb 1 lb (450g) boneless, skinless chicken breasts
  • 2 tablespoons 2 tablespoons olive oil
  • 1 teaspoon 1 teaspoon dried oregano
  • 1 teaspoon 1 teaspoon garlic powder
  • to taste Salt and pepper to taste
For the Salad Bowl
  • 1 cup 1 cup cherry tomatoes, halved
  • 1 cucumber 1 cucumber, diced
  • 1 red onion 1 red onion, thinly sliced
  • 1/2 cup 1/2 cup crumbled feta cheese
  • a handful A handful of fresh parsley for garnish
For the Tzatziki
  • 1 cup 1 cup Greek yogurt
  • 1/2 cucumber 1/2 cucumber, grated and drained
  • 2 tablespoons 2 tablespoons lemon juice
  • 1 clove 1 clove garlic, minced
  • to taste Salt and pepper to taste

Method
 

Marinating the Chicken
  1. In a bowl, combine olive oil, dried oregano, garlic powder, salt, and pepper. Add the chicken breasts and coat well. Allow it to marinate for at least 10 minutes.
Cooking the Chicken
  1. Heat a grill or skillet over medium-high heat and cook the marinated chicken for 6-7 minutes on each side or until fully cooked and juices run clear. Let it rest for a few minutes before slicing.
Preparing the Tzatziki
  1. In a bowl, mix Greek yogurt, grated cucumber, lemon juice, minced garlic, salt, and pepper until well combined. Adjust seasoning to taste.
Building the Bowl
  1. In a large serving bowl, layer sliced chicken, cherry tomatoes, diced cucumber, red onion, and generous dollops of tzatziki. Finally, sprinkle crumbled feta cheese and fresh parsley on top.

  1. Grab a fork and dig in! Enjoy the flavors melding together in each bite.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. The dish can be reheated in the microwave or enjoyed cold. Can be frozen for up to a month, but fresh toppings should be added upon serving.
