  • 2 cups mashed potatoes (leftover or freshly made) Ensure they are at room temperature if leftovers.
  • 1/2 cup shredded cheese (cheddar or any preferred type) Feel free to experiment with different cheeses.
  • 1/4 cup sour cream
  • 1/4 cup cooked chicken or turkey, crumbled Use Halal-friendly substitution if required.
  • 2 pieces green onions, sliced
  • Salt and pepper to taste
  • Breadcrumbs (for coating)
  • Oil (for frying) Sufficient to cover the bottom of the pan.

Method
 

Preparation
  1. If using leftovers, ensure they are at room temperature. If making fresh mashed potatoes, mash until smooth and let cool slightly.
  2. In a mixing bowl, combine mashed potatoes, shredded cheese, sour cream, crumbled chicken or turkey, sliced green onions, salt, and pepper. Mix until well combined.
  3. Scoop out a tablespoon of the potato mixture and roll it into a ball using your hands. Ensure they are firm and well-formed.
  4. Roll each potato ball in breadcrumbs until fully coated.
  5. In a frying pan over medium heat, add enough oil to cover the bottom of the pan.
  6. Carefully place the potato bites in the hot oil and fry for about 3-4 minutes on each side or until golden brown and crispy.
  7. Once cooked, remove the bites and place them on a paper towel-lined plate to drain any excess oil.
  8. Serve hot, with optional dipping sauces like ranch or garlic aioli.

Notes

For vegetarian options, replace chicken with cooked mushrooms or chopped spinach. Ensure your oil is hot before adding bites to avoid greasy texture. If mixture is too soft, add more breadcrumbs.
