Burrito Ingredients
  • 4 large flour tortillas Choose your favorite type of flour tortillas
  • 6 large eggs Whisked and seasoned with salt and pepper
  • 1 cup cooked and crumbled halal breakfast sausage Ensure it's halal-compliant
  • 1 cup shredded cheddar cheese Feel free to substitute with another cheese
  • 1 medium bell pepper, diced Any color bell pepper works
  • 1 small onion, diced Use yellow, white, or red onion
  • 1/2 cup salsa Choose preferred spiciness level
  • to taste Salt and pepper For seasoning
  • Olive oil for cooking Olive oil For sautéing

Method
 

Preparation
  1. Start by dicing the bell pepper and onion. Set them aside.
Cooking the Sausage
  1. In a large skillet, heat a drizzle of olive oil over medium heat.
  2. Add the halal breakfast sausage and cook until it’s browned and crumbled, about 5 minutes.
  3. Remove from the skillet and set aside.
Sautéing the Vegetables
  1. In the same skillet, toss in the diced bell pepper and onion.
  2. Sauté them until they are soft and fragrant, about 3-4 minutes.
Scrambling the Eggs
  1. In a bowl, whisk the eggs and season with salt and pepper.
  2. Pour them into the skillet and gently stir to scramble them with the sautéed veggies.
  3. Cook until the eggs are just set.
Combining the Filling
  1. Add the cooked sausage back into the skillet and stir to combine everything.
  2. Remove from heat.
Assembling the Burritos
  1. Divide the egg mixture evenly among the tortillas, topping with shredded cheese and salsa.
  2. Fold in the sides and tightly roll it up to create a burrito.
Finishing the Burritos
  1. For an extra crispy finish, heat a bit of olive oil in the skillet and place the burritos seam-side down.
  2. Cook for 2-3 minutes until golden brown, then flip and repeat.
Serving
  1. Serve your Loaded Breakfast Burritos warm with additional salsa or toppings on the side.

Notes

You can swap the halal sausage with grilled chicken or black beans. Prep veggies ahead for quicker mornings.
