Preparation
- Preheat your oven to 400°F (200°C).
- Wash the potatoes thoroughly and pierce each several times with a fork. Place them on a baking sheet and bake for about 40-45 minutes or until fork-tender.
- While the potatoes are baking, heat a skillet over medium heat. Add the ground beef and season with salt and pepper. Cook until browned, about 7-10 minutes, breaking it up into small pieces with a spatula. Add diced onion during the last few minutes of cooking.
- Once the beef is fully cooked, remove it from heat and stir in the mayonnaise and ketchup. Mix until well combined.
- Remove the baked potatoes from the oven and let them cool for a few minutes. Slice each potato lengthwise and slightly squeeze the sides to open them up. Spoon the beef mixture generously into each potato.
- Sprinkle the shredded cheddar cheese over the beef-stuffed potatoes.
- Return the loaded potatoes to the oven and bake for another 5-10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, and top with pickles and lettuce. Serve and enjoy!
Notes
You can easily switch the ground beef with ground turkey or chicken if you prefer a leaner option. Try adding chopped tomatoes, sautéed mushrooms, or even avocado for an extra flavor boost. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months.
