  • 2 large large potatoes Choose starchy potatoes for best results.
  • 1 pound ground beef Can substitute with ground turkey or chicken.
  • 1/2 cup shredded cheddar cheese Feel free to use your favorite cheese.
  • 1/4 cup diced onion Add according to taste.
  • 2 tablespoons mayonnaise Provides creaminess to the mixture.
  • 2 tablespoons ketchup For added flavor.
  • Salt and pepper to taste
  • Pickles and lettuce for topping Choose your favorite toppings.

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes thoroughly and pierce each several times with a fork. Place them on a baking sheet and bake for about 40-45 minutes or until fork-tender.
  3. While the potatoes are baking, heat a skillet over medium heat. Add the ground beef and season with salt and pepper. Cook until browned, about 7-10 minutes, breaking it up into small pieces with a spatula. Add diced onion during the last few minutes of cooking.
  4. Once the beef is fully cooked, remove it from heat and stir in the mayonnaise and ketchup. Mix until well combined.
  5. Remove the baked potatoes from the oven and let them cool for a few minutes. Slice each potato lengthwise and slightly squeeze the sides to open them up. Spoon the beef mixture generously into each potato.
  6. Sprinkle the shredded cheddar cheese over the beef-stuffed potatoes.
  7. Return the loaded potatoes to the oven and bake for another 5-10 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven, and top with pickles and lettuce. Serve and enjoy!

Notes

You can easily switch the ground beef with ground turkey or chicken if you prefer a leaner option. Try adding chopped tomatoes, sautéed mushrooms, or even avocado for an extra flavor boost. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months.
