  • 1 cup green onions Chopped, for a fresh and zesty crunch.

Method
 

Preparation
  1. Start by thoroughly washing the potatoes. In a large pot, cover them with water and add a pinch of salt. Bring to a rolling boil and cook until tender (about 15-20 minutes). You should be able to easily pierce them with a fork.
  2. Once cooked, drain the potatoes and let them cool to room temperature.
  3. Chop the cooled potatoes into bite-sized cubes, leaving the skin on for added nutrients.
  4. In a large mixing bowl, combine the sour cream, mayonnaise, salt, and pepper. Stir until well combined.
  5. Add the chopped potatoes, shredded cheese, and half the green onions to the bowl with the dressing. Gently toss until all the potatoes are coated evenly.
  6. If you’re adding cooked chicken or bacon, toss those in now. Get creative with your toppings!
  7. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes before serving.
  8. Before serving, garnish with the remaining green onions and any additional toppings you desire.

Notes

Use waxy potatoes like Yukon Gold or red potatoes for best texture. Adjust creaminess by varying sour cream and mayonnaise. Add spices like garlic powder for extra flavor. Prep a day in advance for less stress.
