Preparation
- Heat a large pot over medium heat and add a splash of olive oil.
- Sauté the chopped onions, carrots, and celery for about 5 minutes or until the onions become translucent.
- Stir in the minced garlic and cumin, cooking for another minute until fragrant.
- Add the rinsed lentils, diced tomatoes (including their juices), vegetable broth, bay leaf, and salt and pepper. Stir well.
Cooking
- Increase the heat to bring the soup to a gentle boil.
- Reduce the heat to low and let it simmer uncovered for about 30-40 minutes, or until the lentils are tender.
Serving
- Remove the bay leaf, taste and adjust seasoning if needed.
- Garnish with fresh parsley before serving.
Notes
Feel free to replace vegetables with what you have on hand. Store leftovers in the refrigerator for up to a week or freeze for up to three months. Reheat with a splash of broth or water.
