Ingredients

  • 1 cup cooked lentils
  • 2 pieces soft-boiled eggs
  • 1 ripe avocado sliced
  • 2 cups mixed greens
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
Dressing
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • to taste Salt
  • to taste pepper

Method
 

Preparation
  1. Cook the lentils according to the package instructions, usually boiling them in water until tender (about 15-20 minutes). Drain and set aside.
  2. Bring a pot of water to a boil. Carefully add the eggs and boil for 6-7 minutes. Once done, transfer them to an ice bath to cool. Peel and set aside.
  3. In a large bowl, combine mixed greens, halved cherry tomatoes, and sliced red onion.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss everything together.
Assembly
  1. To serve, place a portion of lentils at the bottom of each bowl.
  2. Top with the salad mixture, arrange slices of avocado, and finally, add the soft-boiled egg (sliced or whole).

Notes
