Preparation
- Cook the lentils according to the package instructions, usually boiling them in water until tender (about 15-20 minutes). Drain and set aside.
- Bring a pot of water to a boil. Carefully add the eggs and boil for 6-7 minutes. Once done, transfer them to an ice bath to cool. Peel and set aside.
- In a large bowl, combine mixed greens, halved cherry tomatoes, and sliced red onion.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss everything together.
Assembly
- To serve, place a portion of lentils at the bottom of each bowl.
- Top with the salad mixture, arrange slices of avocado, and finally, add the soft-boiled egg (sliced or whole).

Notes
