For the Toast
  • 8 slices whole-grain bread or your preferred type
  • 1 tablespoon olive oil for sautéing mushrooms
  • 1 pound mushrooms button or cremini, cleaned and sliced
  • 1 tablespoon fresh lemon juice for added flavor
  • Salt and pepper to taste
  • 1 cup mascarpone cheese for creamy texture
  • 1 cup cooked white beans like cannellini for added protein
  • Fresh herbs such as chives, parsley, or thyme for garnish

Method
 

Preparation
  1. Start by cleaning and slicing your mushrooms, and gathering all your ingredients.
  2. While preparing, toast the bread slices until golden brown and crispy.
Cooking
  1. In a skillet over medium heat, add olive oil and then the sliced mushrooms with a pinch of salt and pepper. Sauté for about 5-7 minutes until soft.
  2. Stir in fresh lemon juice and mix well. Remove from heat.
Assembly
  1. Spread a generous layer of mascarpone cheese on each slice of toasted bread.
  2. Spoon the sautéed mushrooms over the top.
  3. Add cooked white beans atop the mushrooms and sprinkle with freshly chopped herbs.
  4. Serve warm and enjoy.

Notes

If mascarpone isn’t available, cream cheese or ricotta can be used. Assemble the toast right before serving to keep it crispy. Store leftovers in an airtight container for up to 3 days; best reheated in the oven.
