Preparation
- Preheat your oven to 350°F (175°C).
- Grease a 9x5 inch loaf pan or line it with parchment paper.
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- In another bowl, beat the melted butter and sugar until smooth. Add the eggs, lemon juice, and zest, mixing until well-combined.
- Gradually add the dry ingredients into the wet mixture, stirring gently until just combined.
- Fold in the grated zucchini and vanilla extract until evenly distributed.
- Pour the batter into the prepared loaf pan and smooth the top.
Baking
- Bake in the preheated oven for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
For maximum moisture, use medium-sized zucchini and grate finely. You can also squeeze out excess moisture if needed. Consider substituting half the sugar with honey or maple syrup for added flavor. Store in an airtight container for up to 3 days at room temperature or refrigerate for a week. Freeze for up to 2 months.
