Ingredients
  

For the base
  • 6 pieces Weetbix (crushed) Crushed into small chunks.
  • 1 cup shredded coconut
  • 1 cup crushed nuts (like almonds or walnuts) For added crunch.
For the wet mixture
  • 1/2 cup sweetened condensed milk Or a plant-based alternative.
  • 1 piece zest of 1 lemon
  • 1 tablespoon juice of 1 lemon
  • 1/4 cup honey Or maple syrup for a vegan option.

Preparation
  1. Begin by crushing the Weetbix into small chunks and placing them in a large mixing bowl. If you have a food processor, feel free to use it to make the crushing easier and more uniform.
  2. Mix in the shredded coconut and your choice of crushed nuts into the bowl until combined.
  3. In a separate bowl, combine the sweetened condensed milk, lemon zest, lemon juice, and honey (or maple syrup). Stir well until all ingredients are thoroughly mixed.
  4. Pour the wet mixture into the dry mixture and combine thoroughly. The mixture should be moist but firm enough to hold its shape when pressed into a tray.
  5. Line a square baking dish (approximately 8×8 inches) with parchment paper. Transfer the mixture and press it down evenly into the dish to create a firm base.
  6. Place the dish in the refrigerator for at least 2 hours or until the slice has set firmly.
  7. Once set, remove from the fridge and cut into squares. Enjoy your Lemon Weetbix Slice as an afternoon treat or a family dessert!

Notes

For nut-free version, replace the nuts with seeds. Ensure the mixture is well combined to avoid dry or overly moist slices. Store in an airtight container in the refrigerator for up to a week or freeze for up to three months.
