Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, beat the softened unsalted butter and powdered sugar together until light and fluffy (about 3-5 minutes).
- Incorporate the lemon zest and lemon juice into the mixture.
- In a separate bowl, whisk together the all-purpose flour, salt, and baking powder. Gradually add this dry mixture to the wet mixture until well combined.
- Take spoonfuls of the dough and roll them into balls. Place them on a baking sheet lined with parchment paper, leaving space between each ball.
- Use a fork or the bottom of a glass to gently flatten each ball to about 1/4 inch thick.
Baking
- Bake in the preheated oven for 10-12 minutes or until the edges start to turn golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Assembly
- Once the cookies are cool, spread a generous amount of lemon curd on the flat side of one cookie and top with another cookie.
