Ingredients
  

For the Cookies
  • 1 cup unsalted butter, softened Ensure butter is truly softened
  • 1 cup powdered sugar
  • 2 tablespoons lemon zest Fresh lemon zest preferred
  • 2 tablespoons lemon juice Freshly squeezed for best flavor
  • 2 cups all-purpose flour Can substitute with gluten-free blend
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
For the Filling
  • 1 cup lemon curd Can be homemade or store-bought

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat the softened unsalted butter and powdered sugar together until light and fluffy (about 3-5 minutes).
  3. Incorporate the lemon zest and lemon juice into the mixture.
  4. In a separate bowl, whisk together the all-purpose flour, salt, and baking powder. Gradually add this dry mixture to the wet mixture until well combined.
  5. Take spoonfuls of the dough and roll them into balls. Place them on a baking sheet lined with parchment paper, leaving space between each ball.
  6. Use a fork or the bottom of a glass to gently flatten each ball to about 1/4 inch thick.
Baking
  1. Bake in the preheated oven for 10-12 minutes or until the edges start to turn golden.
  2. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Assembly
  1. Once the cookies are cool, spread a generous amount of lemon curd on the flat side of one cookie and top with another cookie.

Notes

To increase the crunchiness, bake for an additional minute. Chilling the dough for 30 minutes can improve flavor and texture. Store cookies in an airtight container for up to a week or freeze for up to three months.
