Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan by greasing it lightly and lining the bottom with parchment paper.
  2. In a large bowl, mix together the ricotta cheese and granulated sugar until smooth.
  3. Add the eggs one at a time, stirring well after each addition to combine.
  4. Stir in the lemon zest, lemon juice, and vanilla extract.
  5. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
  6. Pour the batter into your prepared cake pan and smooth the top with a spatula.
  7. Place the pan in the oven and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  9. Dust with powdered sugar before slicing, and serve with fresh fruit or a simple whipped cream topping.

Notes

To keep the Lemon Ricotta Cake fresh, store it in an airtight container in the refrigerator for up to 5 days. For longer storage, freeze individual slices wrapped tightly in plastic wrap for up to 3 months. Reheat in a conventional oven at 350°F (175°C) for about 10 minutes when ready to enjoy.
