  • 1 box lemon pudding mix (3.4 ounces)
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened Ensure it's soft for easier mixing.
  • 1 large egg Room temperature is best.
  • 1 teaspoon vanilla extract

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, for about 2-3 minutes.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, lemon pudding mix, baking powder, and salt until there are no lumps.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Scoop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
  7. Bake for about 10-12 minutes, or until the edges are lightly golden.
  8. Remove from the oven and cool on the baking sheet for about 5 minutes before transferring to a wire rack.
  9. Dust with powdered sugar before serving if desired.

Notes

Use fresh lemons for zesting to enhance flavor. Do not overbake; cookies should be slightly underbaked when removed from oven. Can substitute lemon pudding with vanilla pudding for variation.
