- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, for about 2-3 minutes.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together the flour, lemon pudding mix, baking powder, and salt until there are no lumps.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Scoop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for about 10-12 minutes, or until the edges are lightly golden.
- Remove from the oven and cool on the baking sheet for about 5 minutes before transferring to a wire rack.
- Dust with powdered sugar before serving if desired.
Notes
Use fresh lemons for zesting to enhance flavor. Do not overbake; cookies should be slightly underbaked when removed from oven. Can substitute lemon pudding with vanilla pudding for variation.
