  • 4 ears fresh corn on the cob Look for ears with bright green husks and plump, juicy kernels.
  • 2 tablespoons olive oil
  • 1 large lemon (juice) Juice of 1 lemon is needed.
  • 1 teaspoon lemon zest
  • 1 teaspoon black pepper
  • to taste salt

Method
 

Preparation
  1. Start by husking the corn and removing all the silk. Rinse the ears under cool water and pat them dry.
  2. In a small bowl, combine the olive oil, lemon juice, lemon zest, black pepper, and salt. Stir until well mixed.
  3. Brush the lemon-pepper mixture over the corn, ensuring every nook and cranny is covered.
Cooking
  1. Preheat your air fryer to 400°F (200°C). Place the corn in a single layer in the basket and cook for 10-12 minutes, turning halfway through until golden brown and tender.
  2. Remove the corn from the air fryer, let it cool for a moment, and then serve it with extra lemon wedges and your choice of garnish!

Notes

To store leftover corn, wrap it tightly in aluminum foil or place it in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer at 350°F (175°C) for 5-7 minutes until warmed through. For freezing, cut kernels off and store in a freezer-safe bag for up to 3 months.
