  • 2 cups cooked pasta (any shape you prefer) Cook according to package directions
  • 1 cup cooked chicken, shredded Ensure it is halal
Dressing
  • 1/4 cup lemon juice Freshly squeezed is best!
  • 1/4 cup olive oil
  • Salt and pepper to taste Salt and pepper to taste
Salad Ingredients
  • 1/2 cup grated Parmesan cheese
  • 1 cup cherry tomatoes, halved
  • 2 cups mixed greens Like spinach or arugula

Preparation
  1. Begin by boiling your pasta according to package directions until al dente (typically about 8-10 minutes). Drain and let cool.
  2. If you haven’t done so already, shred your cooked chicken into bite-sized pieces.
  3. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper until well combined.
Combining Ingredients
  1. In a large mixing bowl, combine the cooked pasta, shredded chicken, halved cherry tomatoes, and mixed greens.
  2. Pour the dressing over the salad and toss everything gently until well coated.
  3. Finally, sprinkle the grated Parmesan cheese on top and give it one last gentle toss.
  4. This salad can be served immediately or chilled for an hour to enhance the flavors.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Best enjoyed cold or at room temperature.
