Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tray with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
- In another bowl, whisk the melted butter, eggs, buttermilk, lemon zest, and lemon juice until smooth.
- Gradually fold the wet ingredients into the dry ingredients until just combined. Don’t overmix!
- In a separate bowl, using a hand mixer, beat the cream cheese with the powdered sugar until smooth and creamy.
Baking
- Fill each muffin cup 1/3 full with the muffin batter. Add a small spoonful of the cream cheese mixture on top, then cover with more batter until the cups are about 2/3 full.
- Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Notes
Store muffins in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months. Reheat in microwave for 15-20 seconds or let thaw at room temperature. Add toppings like lemon glaze or powdered sugar for extra flair.
