Ingredients
  

For the filling
  • 8 oz Mascarpone cheese (halal-certified)
  • 1 cup Heavy whipping cream (fresh) Fresh for optimal taste.
  • ½ cup Powdered sugar Adjust based on preference.
  • 2 count Lemons Zest and juice (freshly squeezed for the best flavor).
  • 1 tsp Vanilla extract Halal-compliant version.
For layering
  • 12-16 count Ladyfingers or Digestive biscuits For layering.
For garnish
  • to taste Fresh fruits and mint leaves Optional, but recommended!

Method
 

Preparation
  1. Gather all your ingredients to ensure an organized cooking experience. Zest the lemons and set aside, then juice them into a bowl.
Whipping the Cream
  1. In a large bowl, pour the heavy whipping cream and begin to whip using an electric mixer on medium speed. Gradually add in the powdered sugar and continue whipping until soft peaks form.
Mixing the Mascarpone
  1. In another bowl, combine the mascarpone cheese, lemon juice, lemon zest, and vanilla extract. Gently fold this mixture into the whipped cream using a spatula until everything is well combined. Be careful not to deflate the cream!
Layering the Dessert
  1. Take your ladyfingers or digestive biscuits and dip them quickly into lemon juice. Place a layer at the bottom of a serving dish. Spread half of the mascarpone mixture over the biscuits, then repeat the layering process with another layer of dipped biscuits and the remainder of the mascarpone mixture.
Chilling
  1. Cover the dessert with plastic wrap and place it in the refrigerator for at least 4 hours, or overnight if possible.
Garnishing and Serving
  1. Just before serving, top with fresh fruits and mint leaves to enhance the presentation and add extra flavor.

Notes

Keep your dessert fresh by storing it in an airtight container in the refrigerator. It will last up to 3 days but is best enjoyed fresh.
