Ingredients
  

For the Cake
  • 1 package graham crackers
  • 1 cup fresh lemon juice Fresh juice is recommended for best flavor.
  • 1 cup sweetened condensed milk Ensure Halal-certified.
  • 2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 1 zest of 1 lemon

Method
 

Preparation
  1. In a large mixing bowl, whip the heavy cream with the vanilla extract until stiff peaks form.
  2. In a separate bowl, combine the lemon juice, sweetened condensed milk, and lemon zest.
  3. Gently fold the whipped cream into the lemon mixture, being careful not to deflate the whipped cream.
  4. In a rectangular dish, layer graham crackers followed by a layer of the lemon filling. Repeat until all ingredients are used.
  5. Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
Serving
  1. Slice into squares and serve with fresh fruits or whipped cream.

Notes

Store in the refrigerator covered with plastic wrap for up to one week. For freezing, slice individual portions before freezing; can last up to 2 months.
