  • 1 piece turkey breast (approximately 3-4 pounds)
  • 2 pieces lemons (juiced and zested)
  • 4 cloves garlic (minced)
  • 1/4 cup olive oil
  • to taste salt
  • to taste pepper
  • fresh herbs (such as rosemary or thyme, optional) Chop finely if using.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the lemon juice, lemon zest, minced garlic, olive oil, salt, and pepper. If using fresh herbs, chop them finely and add them to the mixture.
  3. Place the turkey breast in a roasting pan and pour the marinade over it, ensuring it’s well-coated. Let it marinate in the fridge for at least 30 minutes.
Cooking
  1. Cover the roasting pan with aluminum foil and place it in the preheated oven. Roast for 45 minutes.
  2. Remove the foil to allow the skin to crisp up, and continue roasting for an additional 15-20 minutes or until the internal temperature reaches 165°F (75°C).
  3. Once cooked, let the turkey breast rest for 10-15 minutes before slicing.
Serving
  1. Slice and serve with your favorite sides.

Notes

For best results, let the turkey sit at room temperature before roasting. Use a meat thermometer to check for doneness and prevent overcooking. Leftovers can be stored in the refrigerator for 3-4 days or frozen for 2-3 months. Reheat in a preheated oven at 350°F (175°C).
