  • 1 medium head green cabbage, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth Opt for low-sodium for best results.
  • 2 medium carrots, sliced
  • 1 large potato, diced
  • ¼ cup fresh lemon juice (about 2 lemons)
  • 2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)
  • to taste Salt and pepper
  • 1 tablespoon Olive oil For sautéing

Method
 

Preparation
  1. In a large pot, heat a tablespoon of olive oil over medium heat.
  2. Add the diced onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
Cooking
  1. Stir in the chopped cabbage, sliced carrots, and diced potatoes. Cook for about 5 minutes till they start to soften.
  2. Add the vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 15 minutes until the vegetables are tender.
  3. Stir in the fresh lemon juice and dill. Season with salt and pepper to taste.
  4. Let the soup simmer for an additional 5 minutes to let the flavors meld together.
  5. Ladle your Lemon Dill Cabbage Soup into bowls, and garnish with extra dill or a lemon wedge if desired.

Notes

Fresh, high-quality vegetables make a big difference. Consider adding red pepper flakes for extra zing!
