Ingredients
  

Pasta Ingredients
  • 8 oz pasta (any shape you prefer, such as fusilli or penne)
  • 1 large cucumber, diced
Dressing Ingredients
  • 1/4 cup lemon juice (freshly squeezed) For the best flavor
  • 1/4 cup olive oil
  • 1/2 tsp salt (to taste)
  • 1/4 tsp black pepper (to taste)
  • 1/4 cup fresh herbs (such as parsley or dill, chopped)

Method
 

Cooking the Pasta
  1. Boil a pot of water. Once it’s boiling, add the pasta and cook according to package instructions until al dente. Drain and set aside to cool.
Preparing the Dressing
  1. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper until well combined.
Combining Ingredients
  1. In a large mixing bowl, combine the cooled pasta, diced cucumber, and fresh herbs. Drizzle the lemon dressing over the mixture and toss gently to combine everything evenly.
Chilling and Serving
  1. Allow the salad to chill in the refrigerator for about 15 minutes for optimal flavor.
