  • 1/4 tsp baking soda

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy (about 2-3 minutes).
  3. Beat in the egg, vanilla extract, lemon zest, and lemon juice until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, salt, and baking soda.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  6. Use a cookie scoop or your hands to form balls of dough, about 1 inch in diameter, and roll each ball in powdered sugar to coat.
Baking
  1. Place the cookies on the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake for 8-10 minutes or until the edges are lightly golden and the centers are set.
  3. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For a more intense lemon flavor, consider adding an extra teaspoon of lemon zest or lemon juice. For less sweetness, reduce the granulated sugar. Store cookies in an airtight container at room temperature or freeze for up to three months.
