Ingredients
  

For the Chicken
  • 2 pieces chicken breasts Make sure your chicken is Halal.
  • 2 pieces lemons (juiced)
  • 2 tablespoons olive oil Plus extra for cooking.
  • to taste salt
  • to taste pepper
For the Rice
  • 1 cup cilantro (chopped)
  • 1 cup brown rice Substitutions: quinoa or basmati rice can be used.
  • 2 cups chicken broth Ensure there are no forbidden ingredients.

Method
 

Marinating the Chicken
  1. In a bowl, combine lemon juice, olive oil, salt, and pepper. Add the chicken breasts and let them marinate for at least 20 minutes.
Preparing the Rice
  1. In a medium pot, bring the chicken broth to a boil. Add the brown rice and let it simmer on low heat, covered, for about 30 minutes or until tender. Fluff it with a fork and mix in the chopped cilantro once done.
Cooking the Chicken
  1. Heat a pan over medium heat and add a little olive oil. Remove the chicken from the marinade and cook for about 6-8 minutes on each side or until golden brown and fully cooked through.
Serving
  1. Plate your cilantro-infused brown rice and top it with the juicy lemon chicken. Garnish with extra cilantro if desired.

Notes

Monitor chicken closely to avoid overcooking. Store leftovers in the refrigerator for up to three days, or freeze for up to three months. Reheat with a splash of chicken broth to maintain moisture.
