  • 1 cup grated Romano cheese

  • 2 pieces lemons (juice and zest)
  • 3 tablespoons olive oil

  • for garnish Fresh parsley

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts dry with a paper towel and season both sides with salt and pepper.
  3. In a shallow dish, combine the breadcrumbs, grated Romano cheese, lemon zest, and a pinch of salt and pepper.
  4. Drizzle olive oil on each chicken breast and press into the breadcrumb mixture, ensuring it’s fully covered.
  5. Place the coated chicken breasts onto a baking sheet lined with parchment paper.
Cooking
  1. Bake the chicken in the preheated oven for about 25 minutes or until the internal temperature reaches 165°F (75°C) and the crust is golden brown.
  2. Once out of the oven, drizzle fresh lemon juice over the chicken.
  3. Top with freshly chopped parsley before serving.
