Ingredients

Main Ingredients
  • 1 pound boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1 large lemon (juice and zest)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • to taste Salt and pepper
  • for garnishing Fresh parsley

Method

Preparation
  1. Season the chicken breasts with salt and pepper. In a large pot or deep skillet, heat olive oil over medium-high heat. Add the chicken and cook until browned on both sides, about 6-7 minutes. Remove the chicken from the pan and set aside.
  2. In the same pot, add the minced garlic and sauté for about 30 seconds until fragrant—be careful not to burn it!
  3. Pour in the chicken broth and bring to a boil. Add the orzo, stirring to combine.
  4. Return the chicken to the pot. Reduce the heat to low, cover, and simmer for about 10-12 minutes, or until the chicken is fully cooked and orzo is tender.
  5. Stir in the lemon juice and zest, giving it a good mix. Taste and adjust the seasoning if necessary.
  6. Garnish with chopped parsley before serving. Enjoy your delightful Lemon Chicken Orzo!

Notes

For best flavor, use fresh garlic and a vibrant lemon. Experiment with vegetables like spinach or peas for added nutrition and color.
