  • 1 lb gnocchi
  • 1 lb chicken breast, diced Can substitute with boneless, skinless thighs for a juicier bite
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 tbsp lemon juice Freshly squeezed for best flavor
  • 2 cloves garlic, minced
  • 2 cups fresh spinach Add at the end to maintain vibrant color and nutrients
  • 2 tbsp olive oil
  • to taste salt and pepper

Method
 

Cooking Gnocchi
  1. Begin by boiling salted water in a large pot. Add the gnocchi and cook according to package instructions, usually around 2-3 minutes. They’re done when they float to the surface. Drain and set aside.
Sauté Chicken
  1. In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken breast, seasoning with salt and pepper. Cook until browned and fully cooked through, about 6-8 minutes. Remove the chicken and set aside.
Make the Sauce
  1. In the same skillet, add the minced garlic. Sauté for about 30 seconds, then pour in the chicken broth. Let it simmer for 2-3 minutes to reduce slightly.
Add Cream and Lemon
  1. Stir in the heavy cream and lemon juice. Let it simmer for another 2-3 minutes until it thickens just a bit.
Combine
  1. Return the cooked chicken to the skillet along with the gnocchi. Gently mix until everything is coated in that creamy lemon sauce.
Finish with Spinach
  1. Add the fresh spinach and stir until wilted. Taste and adjust to your preference with more salt, pepper, or lemon juice.
Serve

Notes

To store leftovers, let the dish cool completely before transferring it to an airtight container. It can be stored in the fridge for up to 3 days, or frozen for up to 3 months. Reheat on the stove over low heat with a splash of chicken broth or cream to maintain the saucy texture.
