Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a medium bowl, whisk together the melted butter and granulated sugar until well combined.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, combine the flour, baking powder, salt, lemon zest, and lemon juice. Gradually fold into the wet ingredients until just combined.
  5. Pour the batter into the prepared pan, spreading it evenly.
Baking
  1. Bake for 20-25 minutes, or until the top is lightly golden and a toothpick comes out clean.
  2. Remove from the oven and allow to cool before lifting out of the pan. Dust with powdered sugar if desired.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. For freezing, place in freezer-safe bags for up to 3 months.
