Ingredients
  

Brownie Batter
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 lemon Zest of 1 lemon (about 2 teaspoons) Fresh lemons are best for flavor.
  • 1 lemon Juice of 1 lemon (about 3 tablespoons) Fresh lemons are best for flavor.
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • to taste Powdered sugar for dusting (optional) Add for a sweet finish.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease and line an 8×8 inch baking pan with parchment paper for easy removal.
  2. In a bowl, whisk together the melted butter and granulated sugar until well combined. Then, add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, lemon zest, and lemon juice.
  3. In a separate bowl, sift together the flour, salt, and baking powder.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix!
Baking
  1. Pour the batter into your prepared baking pan and spread it evenly. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Cooling and Serving
  1. Let the bars cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely. Once cooled, dust with powdered sugar and cut into squares.

Notes

For an extra burst of lemony goodness, consider drizzling a lemon glaze on top made from powdered sugar and lemon juice. Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. For longer storage, freeze wrapped tightly for up to 3 months.
