Preparation
- Preheat the oven to 350°F (175°C). Grease and line an 8×8 inch baking pan with parchment paper for easy removal.
- In a bowl, whisk together the melted butter and granulated sugar until well combined. Then, add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, lemon zest, and lemon juice.
- In a separate bowl, sift together the flour, salt, and baking powder.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix!
Baking
- Pour the batter into your prepared baking pan and spread it evenly. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Cooling and Serving
- Let the bars cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely. Once cooled, dust with powdered sugar and cut into squares.
Notes
For an extra burst of lemony goodness, consider drizzling a lemon glaze on top made from powdered sugar and lemon juice. Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. For longer storage, freeze wrapped tightly for up to 3 months.
