Preparation
- Preheat your oven to 350°F (175°C).
- In a medium mixing bowl, combine the softened butter, sugar, flour, and salt. Mix until the mixture resembles a crumbly dough.
- Press this mixture evenly into the bottom of a greased 8x8 inch baking dish.
- Bake the crust for about 10-12 minutes, or until lightly golden.
- In another mixing bowl, beat the softened cream cheese and sugar with an electric mixer until smooth.
- Add the egg, lemon zest, and lemon juice, mixing thoroughly.
- Once the base has cooled slightly, pour the cream cheese mixture over it, spreading it evenly.
- Gently sprinkle fresh blueberries on top.
Baking
- Return the dish to the oven and bake for an additional 20-25 minutes, until the cream cheese is set but still has a slight jiggle in the center.
- Let the bars cool completely in the baking dish before slicing into squares.
Notes
Store in the refrigerator for up to 5 days or freeze for up to 2 months. Reheat in the microwave for 15 seconds to restore texture.
