Ingredients
  

For the Base
  • 1 cup all-purpose flour You can substitute with almond or oat flour for a gluten-free version.
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
For the Cream Cheese Layer
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon zest of 1 lemon
For the Blueberry Topping
  • 1 cup fresh blueberries (or frozen, thawed and drained)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium mixing bowl, combine the softened butter, sugar, flour, and salt. Mix until the mixture resembles a crumbly dough.
  3. Press this mixture evenly into the bottom of a greased 8x8 inch baking dish.
  4. Bake the crust for about 10-12 minutes, or until lightly golden.
  5. In another mixing bowl, beat the softened cream cheese and sugar with an electric mixer until smooth.
  6. Add the egg, lemon zest, and lemon juice, mixing thoroughly.
  7. Once the base has cooled slightly, pour the cream cheese mixture over it, spreading it evenly.
  8. Gently sprinkle fresh blueberries on top.
Baking
  1. Return the dish to the oven and bake for an additional 20-25 minutes, until the cream cheese is set but still has a slight jiggle in the center.
  2. Let the bars cool completely in the baking dish before slicing into squares.

Notes

Store in the refrigerator for up to 5 days or freeze for up to 2 months. Reheat in the microwave for 15 seconds to restore texture.
