- Preheat your oven to 350°F (175°C) to get it nice and hot for baking adventures.
- In a mixing bowl, combine the cottage cheese, lemon juice, honey or maple syrup, and lemon zest. Stir until well combined.
- Gently fold in the rolled oats, protein powder (if using), blueberries, and a pinch of salt.
- Scoop out tablespoon-sized portions and roll them into balls or drop them onto a lined baking sheet.
- Bake in the preheated oven for about 15-20 minutes, or until they are lightly golden and firm to the touch.
- Allow them to cool for a few minutes before enjoying these delectable bites fresh from the oven.
Notes
For a variation, consider using Greek yogurt in place of cottage cheese or other types of berries. Store in an airtight container in the fridge for up to 5 days or freeze for 3 months.
