Preparation
- Preheat your oven to 350°F (175°C).
- In a medium-sized mixing bowl, combine the cottage cheese and almond flour. Stir until creamy.
- Add lemon juice, lemon zest, vanilla extract, honey or maple syrup, and salt. Mix until well combined.
- Gently fold in the blueberries.
- Form small balls (about 1 inch in diameter) and place on a baking sheet lined with parchment paper.
- Bake for 15 to 20 minutes, or until lightly golden.
- Let cool on the baking sheet before transferring to a wire rack.
Notes
Store in an airtight container in the fridge for up to a week or freeze for up to three months. Reheat at 300°F (150°C) for 5-7 minutes.
