  • 1 tablespoon honey or maple syrup Use honey for sweetness, maple syrup as a vegan alternative.
  • 1 teaspoon lemon zest Use a microplane to zest fresh lemons.
  • 1/2 teaspoon vanilla extract For flavor enhancement.
  • Pinch salt Enhances the overall flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium-sized mixing bowl, combine the cottage cheese and almond flour. Stir until creamy.
  3. Add lemon juice, lemon zest, vanilla extract, honey or maple syrup, and salt. Mix until well combined.
  4. Gently fold in the blueberries.
  5. Form small balls (about 1 inch in diameter) and place on a baking sheet lined with parchment paper.
  6. Bake for 15 to 20 minutes, or until lightly golden.
  7. Let cool on the baking sheet before transferring to a wire rack.

Notes

Store in an airtight container in the fridge for up to a week or freeze for up to three months. Reheat at 300°F (150°C) for 5-7 minutes.
