  • 2 cups leftover turkey, shredded
  • 1 cup onion, chopped
  • 2 cups carrots, chopped
  • 2 cups celery stalks, chopped
  • 4 cups turkey broth
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 2 cups mixed vegetables (optional) Use any available choices
  • 1 cup egg noodles (optional) Add if you like a heartier soup

Preparation
  1. Start by chopping the onion, carrots, and celery into bite-sized pieces.
Cooking
  1. In a large pot, heat a teaspoon of oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
  2. Add the carrots and celery, and continue to sauté for another 5 minutes.
  3. Pour in the turkey broth, and bring it to a gentle simmer.
  4. Once the broth is simmering, stir in the shredded leftover turkey. Add thyme, rosemary, salt, and pepper to taste.
  5. If you’re adding mixed vegetables, throw them in now. Let everything simmer together for about 20 minutes until the vegetables are tender.
  6. If you enjoy a heartier soup, add egg noodles and cook according to package instructions, usually about 8-10 minutes.
  7. Before serving, give your soup a taste and adjust the seasonings as needed.
  8. Ladle your comforting Leftover Turkey Soup into bowls, and top with croutons or freshly chopped parsley if desired.

Notes

For an extra flavor boost, allow your soup to simmer for 30-40 minutes. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
