Ingredients
  

For the Gyros
  • 2 cups Leftover roasted lamb, shredded or sliced
  • 4 pieces Pita bread
  • 1/2 cup Olives, pitted and halved
  • 1 large Mango, diced
  • 1 cup Yogurt (for a creamy dressing)
  • 2 cloves Garlic, minced
  • 1 cup Lettuce, chopped
  • 1 large Tomato, diced
  • 1 medium Onion, thinly sliced
  • 2 tablespoons Olive oil
  • 1 tablespoon Lemon juice
  • Salt, to taste
  • Pepper, to taste

Method
 

Preparation
  1. In a bowl, mix the yogurt, minced garlic, lemon juice, and a pinch of salt and pepper. Set aside.
  2. On a skillet over medium heat, warm the pita bread for about 1 minute on each side until soft and pliable.
  3. In another skillet, add a splash of olive oil and gently heat the leftover lamb until warmed through, about 3-4 minutes.
Assembly
  1. Lay the warm pita on a plate. Spread a generous spoonful of the yogurt sauce over the flatbread.
  2. Layer the lamb, diced mango, chopped lettuce, tomato, olives, and onion.
  3. Fold the pita in half or roll it into a wrap. Secure with a skewer or wrap in parchment paper for easy handling.
