  1. If your leftover lamb has been refrigerated, warm it in a pan over low heat until it reaches a desirable temperature, seasoning with salt and pepper to taste.
  2. While the lamb heats, dice the mango and tomato, and shred your lettuce, preparing all your fresh ingredients for assembly.
  3. Lightly toast the pita bread on a skillet or wrap them in foil and heat them in the oven for a few minutes.
Assembly
  1. Start by placing a generous amount of warm shredded lamb on each pita.
  2. Follow it with olives, diced mango, tomatoes, and crispy lettuce.
  3. Spoon yogurt or tzatziki sauce generously over the top for that creamy, tangy finish.
