Preparation
- In a bowl, combine the leftover mashed potatoes, shredded cheese, egg, breadcrumbs, green onions (if using), and salt and pepper. Mix until everything is well combined.
- Take a spoonful of the potato mixture and form it into small balls or puffs, about the size of a golf ball. Roll them in more breadcrumbs for an extra crispy coating.
Cooking
- In a frying pan, heat about an inch of oil over medium heat. You can test if the oil is hot enough by dropping in a small piece of the mixture; if it sizzles, you're good to go!
- Carefully place the potato puffs into the hot oil. Fry them in batches, turning occasionally, until they are golden brown—typically about 3-5 minutes.
- Once golden, remove the puffs from the oil using a slotted spoon and place them on a paper towel to drain excess oil. Serve them hot with your favorite dipping sauce!
Notes
For a baking option, you can bake the puffs at 375°F (190°C) on a parchment-lined baking sheet for about 20-25 minutes, flipping halfway through until they turn golden brown. Keep the sizes of the puffs consistent for uniform cooking.
