Ingredients
  

For the Crust
  • 1/2 cup butter, softened Make sure it's at room temperature.
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
For the Filling
  • 1/4 cup lemon juice, freshly squeezed Use fresh lemons for best flavor.
  • 1 tablespoon dried culinary lavender
  • 2 units eggs

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease an 8×8 inch baking pan or line it with parchment paper.
  3. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add the flour, salt, and baking powder, mixing until the dough comes together.
  5. Press this mixture evenly into the bottom of your prepared pan.
Baking the Crust
  1. Place the crust in the preheated oven and bake for 15 minutes, or until lightly golden.
Preparing the Filling
  1. While the crust is baking, in another bowl, whisk together the eggs, sugar, lemon juice, and dried lavender until combined.
Final Baking
  1. Once the crust is ready, pour the lemon mixture over it and return it to the oven.
  2. Bake for an additional 25-30 minutes or until the filling is set and slightly golden.
Cooling and Serving
  1. Allow the bars to cool in the pan before cutting them into squares.
  2. Dust with powdered sugar if desired, and enjoy!

Notes

Store in an airtight container in the refrigerator for up to a week. They can also be frozen; wrap them tightly to prevent freezer burn. Serve fresh for the best taste.
