Ingredients
  

For the crust
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
For the filling
  • 4 large eggs
  • 1 cup granulated sugar for filling
  • 1/2 cup freshly squeezed lemon juice (about 4 lemons)
  • 1 tablespoon culinary lavender buds
  • 1 teaspoon baking powder
  • Powdered sugar for dusting (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan.
  2. In a medium bowl, mix the softened butter and sugar until creamy. Add flour and salt, mixing until combined. Press the mixture evenly into the bottom of your prepared baking pan.
  3. Bake the crust in the preheated oven for about 20 minutes or until lightly golden.
Filling
  1. In another bowl, whisk together the eggs, sugar, lemon juice, lavender, and baking powder until fully blended.
  2. Pour the lemon-lavender mixture over the warm crust and return to the oven. Bake for an additional 25 minutes or until the filling is set.
Cooling and Serving
  1. Let the bars cool completely in the pan before slicing. Dust with powdered sugar before serving.

Notes

For optimal flavor, use culinary-grade lavender buds. Optionally, add lemon zest for an extra citrus kick. Store leftovers in an airtight container in the refrigerator for up to a week or freeze for longer storage.
