  • 1 cup mixed vegetables (like carrots, peas, and corn)
  • 1 cup cooked chicken or tofu (optional) Shredded or cubed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh herbs (like parsley or thyme) for garnish

Preparation
  1. Start by chopping your onion and mincing the garlic.
  2. If you’re using cooked chicken or tofu, make sure they are shredded or cubed.
Cooking
  1. In a medium pot, pour in your chicken or vegetable broth and bring it to a gentle simmer over medium heat.
  2. In a separate pan, add a drizzle of oil and sauté the chopped onion until it’s soft and translucent.
  3. Toss in the minced garlic and cook for just a minute until fragrant.
  4. Add your sautéed onion and garlic to the simmering broth. Stir in the mixed vegetables and any cooked chicken or tofu you’re using.
  5. Add salt and pepper according to your preference. Let everything simmer for about 10-15 minutes, until the vegetables are tender.
  6. Once ready, ladle the soup into bowls and garnish with fresh herbs.

Notes

You can customize this soup with whatever vegetables you have at home. It stores well in the refrigerator for up to four days and can be frozen for up to three months.
